Karma Resorts would like to extend a warm welcome to Simon Blaby, our new Executive Chef at Karma Kandara Resort.
Simon Blaby started cooking at the awkward age of 16 having left school early after doing a two week work experience stint at what was then one of Adelaides more stellar restaurants, Deccas Place.
Well and truly seduced by the heat, artistic flair and controlled chaos of a busy kitchen, he begged the owners of the Sebel Townhouse on Hindley Street to take a chance on him for an apprenticeship. Upon completing his four years as an apprentice and studying at Regency College of TAFE, he worked in various establishments in Alice Springs, Southern Queensland and then returned to Adelaide. He took up a position at Jolleys Boathouse, which garnered numerous accolades including national acclaim after being inducted into the American Express Hall of Fame in 1997, preceded by three consecutive years-1994, 1995, and 1996 as Adelaide Metropolitan Restaurant of the Year.
Upon moving to the Sunshine Coast, Simon started at the Spirit House Thai Restaurant in Yandina where as Executive Chef, the Spirit House achieved national acclaim being inducted into the American Express Hall of Fame in 2001, preceded by three consecutive years-1998, 1999, and 2000 as Sunshine Coast Restaurant of the Year.
Bidding Australia farewell, Simon and his family moved to Bali, Indonesia and he took up the position of Executive Chef at one of Bali’s most famous restaurants, La Lucciola in Seminyak, where he cooked for six years.
Simon then moved to our beloved Karma Kandara, in Ungasan, Bali where he currently designs menus, works closely with his beloved brigade of cooks and still rattles the pans. His philosophy of food is “top quality produce cooked simply and presented beautifully”.
